Mop’s Sweet Potato Curry

Ingredients

  • Lug of oil 
  • 2 Medium onions
  • 1/4 Cup mild curry paste 
  • Small tin of tomatoes 
  • 900g Chicken 
  • Chicken stock 
  • 2 Medium sweet potatoes 
  • 200g Snow peas 
  • 1 Small tin coconut milk

METHOD

  1. Cook onions in oil
  2. Add the curry paste and cook until fragrant (2-3 mins)
  3. Add the chicken and cook until coated with the curry paste
  4. Add all the remaining ingredients EXCEPT for the snow peas
  5. Simmer until the chicken and the sweet potatoes are cooked
  6. Add the snow peas and simmer until they are cooked and then serve with coriander
