Mop’s Sweet Potato Curry
Ingredients
- Lug of oil
- 2 Medium onions
- 1/4 Cup mild curry paste
- Small tin of tomatoes
- 900g Chicken
- Chicken stock
- 2 Medium sweet potatoes
- 200g Snow peas
- 1 Small tin coconut milk
METHOD
- Cook onions in oil
- Add the curry paste and cook until fragrant (2-3 mins)
- Add the chicken and cook until coated with the curry paste
- Add all the remaining ingredients EXCEPT for the snow peas
- Simmer until the chicken and the sweet potatoes are cooked
- Add the snow peas and simmer until they are cooked and then serve with coriander
